2 weeks in the fermenter, just read gravity for the first time, got 1.002 at 21'c. Checked and checked again.

OG was 1.054, so that's an ABV of 6.8%!

How is that possible? Brewsmith predicted 5.8%.
 
I was going to ask what temp you mashed at.

Mashing at 64°c got me down to 1.004 previously.

Here you go, all the details:

SMaSH Citra IPA - 04/02/2017

Ingredients:

5.4 kg Maris Otter
200gm Citra Hops
5g Irish Moss
safale 05 yeast 1 pack

Initial liquor volume 48l

Water treatment:

75ml of CRS to liquor
6g DLS added to grain (no further addition to wort pre-boil)
1 campden tablet

Mash volume 14.08L

Mash target temp was 66.7’c, achieved 66.5’c with strike water at 75’c.
Mash Ph achieved 5.2

60 minute mash - final mash temp 66’c.

Fly sparge
Pre boil volume of 33.5L
Pre-boil OG of 1.040 @ 53’c = 1.050 @ 20’c
 
OK for those who are interested. Just under 3 weeks in the bottle (bottled on 25th Feb after five days dry hopping) and I've had a taste. Very light in colour. Really dry and crisp, but those mango flavours from the citra are lovely. Not a complex beer as you'd expect from a SM&SH I guess. The hops overcome the alcohol so it's very drinkable. A little hazy, but that may be the sheer amount of hops, that's what I'm telling myself anyway! Here's a pic.
