Unwanted bread into beer?

Funny my brother brews bread beer at home but he bakes sourdough bread and leaves for two weeks prior to using.

"I baked two loaves using the sourdough yeast then let it sit for nearly two weeks. Then broke it up into water. 400g strong white bread flour 100g brown 150g sourdough starter yeast. Needs to be well fed before. And 5 gallon water. Once mixed let sit for 2-3 days before straining and add 2 tbsp per pint. Handful of raisins and once they float your yeast is fully active and nearly ready for racking."

This lot were on the programme that Jamie Oliver does on a Friday night. Seemed to rave about it, but then everything is Puckaa to him anyway!!
