I'm currently mid way through a pilsner fermentation and have a couple of queries - probably should've asked them beforehand!! :-?

The beer has been fermenting at 12 degrees C for a week and I've just ramped it up to 16 and dry hopped. My plan is to let them work for 3 or 4 days and then start lagering over the next few weeks. My main question is: should I move the beer to secondary before this or will it be alright in primary?

When I had finished making the wort, I couldn't quite chill to 12, so I got it as low as I could and then put it in my fermentation fridge over night for the last few degrees. Before I did that, my OG reading (refractometer) was 1.056. Next day when I actually pitched the yeast, it was 1.059. My second question then is, which is the value I should use? Did the lower temp plus extra time account for the difference? I know the temp has an affect on the reading.

Thanks,

Steven
