Today I'm brewing using the 750g of wild hops picked my my local landlord while walking his dog.

20L
OG 1.055

4kg maris otter.
375G wild hops @ 60 min.
185G wild hops @ 15 min.
185G wild hops @ 0 min.

irish moss @ 15 min.

white labs 001 yeast.

I've no idea what these hops are or how strong they are. But they spell pretty pungent. The additions are pretty arbitrary, I've just split 50%, 25% and 25%.

I've kept the grain bill as simple as possible and used the cleanest yeast I could find in order to let the hops come through.

Strike water at 72°c, then hit my dough in temp of 66°c bang on. dropped to 65°c over the 60 min mash.

Mashed out at 78°c and now boiling away.

Should be interesting.....
