I bought yesterday for a pound at Wilkinson's "The Gervin Yeast Recipe Book" by Professor Gerry Fowles and found it really good. He was a winemaker for nearly 50 years and as Professor of Chemistry at Reading University led a research group studying fermentation. Also of note is that he started up the Gervin Yeast firm.
The booklet has 36 pages and includes 37 recipes for wines. As a winemaker and chemist he developed different yeasts for different styles of wine, some of which ferment best at cooler temperatures which helps to preserve delicate flavours.
Gervin make 13 different yeasts and the booklet indicates which ones to use for different wine styles.
