Nice one, now get another on, its a criminal offence to have empty DJ's in the house.

hi Chippy_Tea...

iv got some elderberry cordial i made its very thick ...
and some seedless blackberry jam i made ...
so i was thinking of putting them both together and see what that tastes like ...
i dont like the cordial so its just put up in the shed...

I like your labels. Although I gave up labeling as a general rule unless I want to give any away. SWMBO goes though the stuff so fast the labels are still damp.

thanks bobsbeer...

i only do them for a bit of fun...
if your other half goes through them like that at least you no its good stuff...l  ..

regards mick... :hat: .

ok so i bottled this 2day ...
my elderberry cordial, and blackberry jam wine ...

it tasted very fruity with a small after burn like a spirit...
all in all very nice ...

Mick could you post the recipe for the blackberry wine please? It looks great!

my elderberry cordial and blackberry jam wine ...

i made both of these back in the summer and didnt use much of eather...

so this is why i thought id try to do a wine out of them ...
so i put the jam in my sanitised pot and added 2 pints of boiling water to disolve it ...
i then added 1.5kg of t/l sugar mixed that in and then i put 2ltrs of the cordioal in ...
and 2tsp of pectolase to stop the jam resetting ...

i heated it all up and simmered it for 20 minutes...
i then put it in a sink filled with cold water until it was down to 22c...
i took my first reading it was 120...
i then poured it into my plastic bottle and pitched the yeast and fitted the air lock ...

heres some pics ...

sorry forgot to say i put a 1/4 tsp of marmite diluted it in boiling water...
after it had cooled down i added it to the brew...
this should help feed the yeast...
