So i have started my first cider! Its a passionfruit cider 5L! The ingredients are;
3litre apple juice
1litre passionfruit juice
200grams sugar
1 mug of strong tea
1tsp super wine yeast(all i had)
1tsp yeast nutrient(all i had)
The apple juice i used had 104g sugar per litre, the passionfruit juice i used had 112g sugar per litre, so it 104x3=312+200+112=624g sugar!

Should i have used a different yeast or will the super wine yeast be okay?

Should i of added 1tsp pecolase and or either 1tsp glycerine?

What abv will it turn out?

Has anyone made a cider like this before?

All comment welcome as its my first cider! Thanks ryan

Hey

Wine yeast is ok, its normally designed to handle high alcohol levels. However some yeasts do impart flavours and have different clearing levels. But you should be ok. I normally use gervin ale yeast.

Depending on how much you ferment you will end up with around 6.5-7%

Well I tend to ferment mine for 2 weeks then rack into another demijohn and allow to mellow for a week or more. Then backsweeten if you want something with sweetness.

But it depends on the taste your after. Best thing is to taste taste taste :)
