Hi,

What is the general consensus on yeast with kits?

Is the yeast that comes with the kits good enough to make a decent beer or is it always better to purchase a different yeast to use with the kit? Is adding an extra £3-£5 on top of the kit cost (plus additional fermentables £5) worth it for the better taste?

What's the expert opinion?

There's no golden rule. Generally speaking I don't see much point in swapping a dried yeast for another dried yeadt, unless you determine that you like a particular dried yeast and prefer to use it. Quite a few people use US05 or SO4 with their kits.

To some extent it depends on the kit. Kit yeasts have improved, and some kit ranges come with yeasts that are specifically chosen for the beer style. Some kits, like Coopers wheat beer, will benefit from a different yeast, because the kit beer is not really geared to the style. Coopers wheat comes with an ale yeast.

Some people splash out on liquid yeasts. They cost 6 or 7 quid but can make a huge difference and you can harvest yeast for future brews.
