I have WLP001 in the fridge and I want to brew a pale ale.
Most pale ale recipes call for English Ale Yeast, or Dry English Ale Yeast, to show off the malty profile of the brew.
Would using WLP001 for a pale ale be a mistake? Should I brew an IPA instead?
