This is a copy of a beer called saison d'epeautre which uses a third spelt in the grain bill. It's a very pale beer and the spelt adds a flavour that's similar to wheat but more nutty.

The hop bill looks excessive but I had tons of low alpha hops to use up.

This beer should be well carbonated so you get a prickly dry finish.

Recipe:

75 min mash @ 65c

4kg Pilsner Malt
1.5kg Spelt Malt
200g Carapils
0.35kg Honey

90 min boil

100g Celeia (2.1AA) @ 60 mins
50g Bobek (1.1AA) @ 60 mins

Yeast - French saison
 
Also, you don't really need the carapils. I just had it left over so I threw it in.
