Need to use a Cooper wheat beer can as out of date and got this so far, any thoughts, also a lot of honey as I've heard it ferments out a lot of flavour. Also got a T-58 belgium yeast spare so thought would use that

Looks good. I'd recommend fermenting cold with T-58. It's a very "characterful" yeast.

EDIT: Also it isn't a wheat yeast so won't make for an authentic wheat beer.
 
How cold? As I now have my inkbird I can dial it in exactly

17C should do it. Just don't go over 20 like I did, twice. The beers are slowly improving... but they have been condition for 20 months and aren't ready yet.
