What are the differences between yeasts? Stupid Alert!

I admit i'm probably being stupid here, but i currently use wine yeast to make my cider. What are the actual differences between the different yeast? After all they all do the same thing in the end don't they?
As a logical guess, do they add to or enhance flavours?

It would certainly help me when i next go the the homebrew shop (which i rarely visit - it's miles away)

different yeasts give different style of flavours and different yeasts are needed for different jobs such as fermentation temps like a larger yeast is needed for low temp and ale yeasts like a weisen for higher temps . you may have many different ingredients but its all about the yeast at the end of the day that makes the real difference , if i was to brew 2 identical sets of grains and used different style of yeasts i would get 2 different beers
 
Wow, that's just complicated it a whole lot more for me now but thanks for that. I suppose it makes sense.

So i guess that when making my cider i would get a much better result by using cider yeast would i? And ginger beer would be better with an ale yeast?
 
lol thats where its a bit f^^^ed up cuz yes AND no , depends on what your brewing but cider yeast or champagne yeast for cider and sparkling wine or champagne yeast for ginger beer also depends on if a high alcohol is being brewed then a different yeast is needed. to make things simple though ask here for peoples advice plus do a google search on yeasts etc for info thats the way i'm learning :thumb:

Cider generally ferments well with anything, wine yeast is fine, i often use montrachet cos its cheap! Nottingham and s-04 are said to be good too as they improve the fruit flavour.

Only when you get pretty serious, or when you brew beer, will yeast make a huuugge difference. The best thing you can do for cider is look into chemical additives - pectic enzyme, citric acid, tannin - or vary the ingredients or blend of apples. As they say, as long as the beers good, its all.good!
 
yeast list above ,i should of mentioned the list ain't so bad as many as mentioned 2 or 3 times as its wyeast then white labs then a list of same as each other etc so its about a third long as it really is
 
I have started doing comparison brews (in beer) as I now ALMOST have the brew cellar sorted. I'll make ~50l of wort and ferment in two FV's with two yeasts at the same temperature. First attempt thats going at the moment is a pale ale with US-05 (or WLP001) and S04 as really these are the two I have used the most!!

I think Aleman posted in the case of beer anyway that the yeast can have a say in 70% of a beers, obviously with lots of a certain grain or hop you will get that coming thru but the yeast will interpret it in a different way.

Oh christ, this is a question I have too as until I started AG I just used the packaged yeast.

Is there a particular go-to yeast for different beer types?

EG, SO4 for darks, Nottingham for pales? I've used those as examples as they're the two I've used for my two AGs so far, but neither are ready to taste yet. I'd love to try the same batch with two different yeasts as an experiment.
 
Appreciate you probably have blisters with all the typing and I applaud the effort, but there was a very heated thread over on Jim's about the validity of that research into the origins of the yeasts. Kristen England, author of the piece and Graham Wheeler would have come to blows if they had been in same room. My recollection was that Graham had the strongest argument, i.e. why would they call WLP013 London if it originated from Worthington White shield, a Burton brewery. And WLP023 Burton from Henley on Thames. I used to capture White shield yeast from bottles for over 10 years until my LHBS sold me my first liquid yeast which was the Wyeast London, supposed to be from White shield according to England and have to say they were totally different, certainly would never have said it was the same yeast. Can't remember Graham's idea's about the origins, if I get time will try to find it and post a link.
