Any thoughts on this. Was planning on doing something along the lines of purity mad goose, but a bit more hoppy.
Biab to end 23 litres. Unsure of what yeast though. Normally use US-05, but I have crossmyloof cali common and us pale.
4kg maris otter
400g cara gold
200g wheat malt
30g pilgrim 10aa@ 60mins
25g cascade 6aa@ 10mins
25g williamette 5aa@ 10mins
25g cascade @ 0 mins
25g williamette @ 0 mins.
Will ferment at 18oc for 10 days and raise to 21oc for 4 days.
Should turn out about 4.8%

Any thoughts welcome

I also love Mad Goose, one of the pubs in town do it. I don't recall it tasting of Cascade too much, so guess there can't be too many late hops.

Let us know how it turns out, I'm also up for having a go at this one.

This has piqued my interest so I've done a bit of reseach on the recipe this morning. I'd swap your wheat malt and caragold quantities so that you have 10% wheat malt and 5% cara. And for the yeast I'd use US-05.

I'll be having a go at this sometime but not for a while as I'm in "use up" mode at the moment and don't have any Pilgrim hops.
