I use a little bottler so as the beer level reaches the rim, you remove it and the displaced volume reduces the beer level to about an inch and a half from the top.
 
All sorted, thanks. I got 42 500ml bottles from my brew, 1 1/2 carbonation tabs in each bottle.
I have stored them away until at least mid August after my summer hols.
 
Been bottled for 7 weeks now and I have just poured myself a glass, beautiful head and strong taste, perfect.

I was worried because after opening a bottle after about 3 weeks there was no head at all and a very acidic taste.
