Hi I had a Sasion stove topper on the go (all grain) been fermenting for over 2 weeks now, there was some bubbling that i could see in the demi-john small bubble, with the air lock not bubbling, however the air lock has seem to started going again last night, Is this normal , I thought 2 weeks would be about long enough to ferment out?
my concern is that i will being going on hols for a week and was hoping to bottle before i go, will it be fine left on the turb for an extra week

Did you per chance use WLP565? It's famous for stalling then restarting after a week or 2. Don't worry about leaving it a bit longer, I ferment my rye saison for 5 or 6 weeks in the primary.

Im sure it was Dan Star but that number looks familiar, good to see that i should be ok, thanks
