A tripel using crossmyloof belgian ale yeast.

Og 1072
Current g 1012 at 5 weeks - still pressurised but bubbling only once per hour so could just be a heat thing? Tastes great even now.

Never had krausen remaining past 2 weeks.... happy to let it wait a while longer as its big enough to take it but wondered if anyone else had this and what you did?

I can siphon under the krausen into a secondary for week and let settle or gentle swirl primary to encourage k to fall. Am erring on secondary...
 
Yeah I've had krausen that refused to drop on its own. A gentle shake and a few nudges did the trick.
 
My latest ale is finished and still had bits lingering..as said a good shake and set to 4 degrees and it's totally clear and ready to bottle.
