AG #2 Based on Greg Hughes Raspberry Wheat

So after the success of my EKG SMaSH in December, it's AG #2 for me today and I want to attempt to get a better hold on water volumes. I've picked a simple recipe and it's another small batch BIAB with a 10min dunk sparge. I'm aiming for 8L in the FV at 1.050.

I've boosted the grains a little after reading that it is sometimes hard to efficiently mash wheat malt. Also my hops were a little higher in AA than in the GH recipe, so I reduced the amount slightly.

Intended mash water was 4.5L at 65C but added 100ml to adjust temp, so total mash water 4.6L.
First runnings came out at just over 3.5L, so loss to grain was around 1.1L. I did twist the bag up a little, but certainly didn't squeeze hard.

Dunk sparge in 76C water for 10Min. Total combined 1st & 2nd runnings = 10.5L

Pre boil SG = 1.026 @ 60C. Temp correction is 1 point for every 4C. So corrected 1.036. This doesn't look very promising...

Just under 9L in the kettle post boil. Around 1.6L evaporation/hr

Ended up with a smidge over 8L in the FV, losing around 800ml to hop debris, break, OG sample and a syphoning nightmare. Should be able to reduce this a bit.

OG 1.048, 2 points under target. Pitched 1tsp US-05 at 24C.

Looks great!
I've sampled krieks in Belgium, and loved them. There seem to be two versions - one sweeter than the other.
I wonder whether adding some raspberry syrup at the end of fermentation would get a sweeter beer?
 
According to brewers friend (http://www.brewersfriend.com/dilution-and-boiloff-gravity-calculator/) you're almost bang on, you should hit 1.051, nicely done. :thumb:

That's encouraging. Actually, I only lost around 1.6L in the boil, so depending how much gunk is in the bottom of the kettle, I might be a little high on volume. Still, If I'm somewhere 1.045 to 1.050 I'll be pretty happy considering it's my second attempt with this equipment. Cooling outside at the moment, so shall find out soon!

Actually, I had a nightmare getting the wort from the kettle to the FV and failed using a syphon due to the hop debris and break clogging it. Had to change to a colander and mesh bag to filter it out. Lost a bit of wort doing this, so was a little over in my water estimations. That goes some way to explaining the missing of the target.

After pitching the yeast, I remembered I forgot to shake the wort to aerate it. Hope I get away with it...

Edit: Gave the fermentor a vigorous shake for a minute or so. Produced a nice foam on top so hopefully not too late.
 
Does anyone know how to account for the additional sugar added with the raspberries at secondary in a fruit beer? I took an SG of 1.48, which assuming it ferments to 1.010 will give an abv of around 5%.

But when I add the raspberries, it will presumably ferment out the sugars in the fruit...

Any thoughts? Thanks!
 
There are various articles and calculators out there online. Although they add sugar they also add water so really you need to look at the gravity they add. I've got a book by Randy Mosher and he says (frozen) raspberries add 2 gravity points per pound per US gallon. You've got about 1.75 US gallons so if you added 1.75 pounds (800g or so) then your beer would be 1.050 instead of 1.048 based on this calculation. I'd read around though.
 
One week on and it's time to drop the wheat beer on the raspberries.

Put 1kg of frozen raspberries into a sanitized bucket and allowed to defrost. Mashed them with a sanitized potato masher and then siphoned the wheat beer on top.

Took an SG of 1.008 which is down from 1.048. :thumb:

Tasted really clean already and there's a lovely creamy wheat flavour at the back end. Excited for this one.

Bottled this morning. 22 x 330ml bottles of Raspberry Wheat Beer now carbonating alongside 17 bottles of Roddy's strawberry & lime TC.

Drank a sneaky half pint that wasn't quite enough to fill a bottle. Tastes like raspberry fruit juice. Dangerously drinkable.

Put on one can from my Wherry kit too while I had all the gubbins out in the kitchen.

Made up one can to 10.5L. OG 1.048.
Added the whole packet of supplied yeast.

Going to keep this first can as intended by the kit, then pimp the second one for comparison.

Well that's the wheat beer all tarted up and off to a dark hole for a while!

An all grain Yorkshire Bitter next on the cards I think...

I'm loving the pink crown caps. Where did you get them from. I normally just use borint old gold ones from wilko

Got them from this guy on ebay. Rotherham based I think. A bit more expensive than Wilko, but I bought 100 which brought the price down a bit closer. He has loads of colours. :thumb:
