You don't necessarily need to bottle them all at the same time. the stronger brews could be left a week longer.
Do you have a filter on your tap or did you get the chlorine out of the water?
my tap water is **** so I use bottled.
the og would be a tiny bit different because of the yeast but not something worth worrying about.
