What is an acceptable fluctuation in temp for yeast without causing problems. Are some yeasts more tolerant than others?

It depends on the yeast and the fermentation stage/gravity. +-2C are normally no problem. I ferment at a somewhat fluctuating ambient temperature (day/night) all the time. If the fluctuations are high there is a danger of the yeast stalling and premature flocculation and drop out.
