I haven’t posted anything in here for a while but my birthday is coming up and if I want a cake I have to make it myself. I made a banana loaf cake with a bourbon caramelised pecan topping. I caramelised the pecans with maple syrup and bourbon and lined the top of the tin with them before baking the cake. Visually it’s a little unimpressive as the caramel is sitting on top rather than the nuts. Maybe I will make a bourbon buttercream to ice it
 
So I finished my birthday cake today. Candles go on later. I made a standard buttercream (1 part butter, 2 parts icing sugar, beat it like it owes you money) and stirred a little taste of bourbon through it, not too much as the kids will want to eat it! Decorated with a few more caramelised pecans. Decorating cakes is not my strong point!

Yesterday I whipped up a batch of chocolate brownies. I love to mix wacky flavour together in these but this was a straight up chocolate batch. They are always amazing but I can’t claim any credit, I just use the recipe below to the letter. The key is getting the melted chocolate and butter cool before mixing in the rest of the ingredients.
