When racking off wine from one dj to another is it ok to top up with cooled boiled water every time as you lose a bit when leaving bits behind?
 
Yes, I don't bother boiling it and have never had a problem, you can also use juice if you think it may water the original down too much.
 
Thanks I'll try top up with the juice then. Will you then be adding more sugar thou?
 
Yes but if you have stabilised it it will be fine, it will of course be a little sweeter.
