You know, as a kit brewer of many years I never did believe what everyone said about AG but it is so much better than kit brews. Or commercial beer come to think of it. And my Northern Brown I'm currently drinking knocks Newcastle Brown into a cocked hat...
 
Good luck with it. I have been AG brewing on the stove for 4 or 5 months now and it's not as daunting as you'd think. You'll be amazed at hiw straight forward it is.

What is the Gypsum for? soft water or something?

Yep moving away from kits the flavour is so much cleaner andif there was ever any hint of twangs in some kits, it just isn't in this sort of thing.. Its more exciting too
 
Few more hop additions of Simcoe at 45 and 55 mins. Heat off at 60. Steeped 20g more at 80 degrees for 15 min. Then chilling it down to 20 as we speak.
