Having collected many kgs of blackberry's and elderberrys the past few weeks and sticking them in the freezer, decided to pull my finger out and get some brewing done.

First up a blackberry cider.
1lb of blackberry's, boiled in 500ml water and crushed a bit.
3.5l Morrison's apple juice
Pectolose
Yeast nutrient
Splash of lemon juice
Yeast starter made up of Young's wine yeast
Strained the fruit juice in to the DJ, added the apple juice and added dissolved sugar until the OG was 1065.
Waited till it was 20c and added the yeast and away it goes!!!
Plan is to brew for 5 days and the rack off through some muslin to a fresh DJ and leave for a month, then bottle it and put aside for Christmas.

Second batch is 10l blackberry and elderberry wine.
2.5kg of blackberry
2.5kg of elderberries
All boiled up and mashed a bit.
2kg of sugar
Grated orange peel and juiced the orange
Pectolose
Cup of rediculously strong Yorkshire tea
Made up a yeast starter - Young's wine yeast
Yeast nutrient.
Dumped the whole lot in my fv and topped up to 10l and bunged in the yeast at 20c
OG of 1085
Plan is to leave it for 5 days, then rack it through some muslin in to 2 DJs and leave it 6 months, bottle it mid next year and maybe crack in to it Christmas 2018!!!

Let's see what this lot turns out like!

Whilst I was at it, put 500gm elderberrys in to a litre of gin and 500gm blackberrys in to a litre of vodka.
They'll get a good shake every couple of days between now and Christmas and be used for various cocktails!!!
