Just how important is it to cool the wort quickly. I only ask as I will have my brewery finished today all except for a wort cooler. I have all the ingredeants for my maid brew. So would it be ok to do my brew and let the wort cool naturaly or should I wait till next weekend when I hope my wort cooler will have arrived.
 
As ive not wort cooler as yet, i tend to let it cool overnight and then pitch the yeast the next day. So far ive had no problems, but i will definatly be geeting a chiller soon.

Think im going to leave it till next weekend though. Moto GP on this weekend so dont want to balls my brew up by getting distracted :D

Im still watching qualifying so havn't gone out and finished building yet :D
