Hi Everyone,
brewed a St Austell "proper job" clone at the weekend as it was around 5.5 ABV I made up 2 yeast starters to give it a good start. I've just realised that one was Nottingham yeast and the other was Windsor yeast. Everything seems to be going well, but I was just wondering what effect, if any, mixing 2 different yeasts together would have

Some breweries do use a combination of two yeasts (I think aleman posted something about it on a thread). I would have thought that given time one would dominate the other but fermentation may well be over by then, so perhaps you will get the best of both yeasts.

I think there are a number ways of using two yeasts. It just depends on the flavour you wish to extract from them and how well attenuated you want your beer.

It will certainly give the beer it's own unique taste :thumb:
