help with Belgian dubbel recipe

Hi,

Could anyone help a novice brewer with the recipe below? I've adapted it from here: https://brewedbyus.com/recipes/27-belgian-dubbel-partial-mash-template/

Has anyone used Mangrove Jack's Belgian ale yeast before?

Do Special B and Caramunich contribute fermentable sugars or just colour and flavour?

I've also got some chocolate malt and some light crystal sitting around, so they could be added if it would be beneficial.

Too many hops?

Grains/Fermentables
4 kg Pale Liquid Malt Extract
0.5 kg Special B (180 °L)
0.5 kg CaraMunich (56 °L)
0.5 kg Dark Candi Sugar (75 °L)
Hops
25 g Fuggles (Boil - 60 mins)
25 g Fuggles (Boil - 15 mins)
Yeast
Mangrove Jack's Belgian Ale yeast
 
I think you've too much special B and caramunich. I'd go about 150g special B and 250g Cara. They are powerful flavours. You want about 20 IBUs, not sure what your hop schedule gives but traditionally dubbels only have one hop addition I believe. Not used that yeast but people who have seem happy with it.
