As the "Tinkers Cuss" brewery is still not finished (Curver Mash Tun & 4 gallon Burc/ sorry HLT so far),
I'm going to make up 2 kits this weekend. A Brewmaker Irish Velvet, & a Coopers Australian Lager. When I've made these before I've always used the yeast that came with them. I have 2 sachets of Safale S-04 in the fridge & wondered if using them would produce a better finished beer, also would it make a difference to the lager ie top/bottom fermenting? (that may sound stupid but I've been reading a lot, possibly too much).
One more question, is it better to make up a starter &, if so I've a couple of out of date Geordie/Youngs bitter cans. Could I use a spoonful of the extract from one of them?

I personly wouldnt use S04 for Lager. :nono: As its a Ale / Stout yeast .

And from my experiance with using S04 i would just dump it into to FV and give it a arm aching stir.
