I am in the process of making a malbec kit and now at stage 4, stabilisation and clarification I have added the Chitosan but not sure whether to keep the temperature at 21 degs c or lower it buy 10 degs c
 
I have a temperature controlled brew fridge ill drop the temperature to 50 degs f for a few days and see what that does
