Hi folks,

On Thursday I started 1 gallon of mead, and it's gone nuts! I read that Mead can be hard to get going, but so far it's bubbling like mad.

1.8kg of Honey (4lb) £5.40 from ASDA
1 tsp yeast (rehydrated for 15 minutes)
1 tsp of nutrient
3 ltrs water

All done as per fatdad's recipe from his video he posted (many thanks!)

OG 1.130 :-o Think I should have used super yeast. If I had it would be approx 17% ABV by the time it finished, but I was aiming for a sweet wine anyway. I'll suck it and see! That's what learning HB is all about...right?
 
Hi. First time I did a mead it also went nuts. Just done another one which defs didn't go nuts.... But we got there in the end. This one has finished about 20% (higher than I wanted but hey-Ho). Not sure what yeast you used but Lalvin D-47 is a good one, and used correctly will get you to 15-18%abv. Problem with high alcohol types is they take longer conditioning before you can drink them to mellow out and get rid of the ester taste. I'm always messing about with my recipes ( which can be expensive) but it is fun to experiment! Good luck! P.s try these sites for cheap honey. I prefer the first one as it's made in uk.

I didn't use super yeast on this try, so it stopped at 9%abv. Racked it to a clean dj and added super yeast. It's bubbling like mad again. Just going to let it run it's course and see what %ABV it comes out at. I'm not sure what the tolerance of the yeast is that I'm using, but if it ferments dry it could be 17.5% abv. I just hope I don't go blind from it! : P
 
This was a mead (actually a pyment) I did a few months back and on day2 it was rocketing. Sorry the video is on its side.

Hell fire! How did it turn out? Here's my plum mead. Very strong but seems to have mellowed out quite well over a short time. Can't wait to try it in a few months.
