I love my brew fridge. The whole process is so easy and reliable now I don't bother to measure anything. I just make up the wort, pitch the yeast, shove it in the fridge at 18 for 10 days. Then 21 for 5, then 12 for a week. Then bottle.
 
Hey winelight,
I'll risk sounding stupid but I'm guessing 21 for 5 days is the diacetyl rest?
