I emailed the beer company the other day questioning the fermentation time etc.
They replied a follows:

Sorry for the late reply I was double checking the answer with our product department. Our recommendation would be that you should start bottling right away as your apparent extract is already down to 1.010, so it's already pretty low. So our guess is that the bubbles you are seeing are not from the fermentation...

So you can go ahead and bottle it
