Just made 3 gallons of sparkling elderflower wine, using the River Cottage recipe. I've used this recipe several times before and it has turned out really well. This time however, despite following the same recipe, I have run into a problem; the liquid elderflower is anything but! Rather than the usual consistancy, it is more like the consistancy of wallpaper paste. Thought of diluting it, but I think that may make it watery and weak. Can anyone tell me what has happened, and if there is any way of putting it right?
