Have chosen this as my 3rd brew, taken from Greg Hughes book
as follows
Grains
Pale malt 8.5kg
Chrystal Malt 120L 550g
Roasted Barley 591EBC 220g
Carafa III 1034.2EBC 170g
Chocolate Malt 886.5EBC 170g

Hops
Challenger 7.5% 57g@60min
Goldings 5% 57g@30min

Irish moss@15min

Yeast
Safale US-05 2pks

est OG 1.089
est FG 1.024
est ABV 8.6%
Bitterness 59.6IBUs
Est colour 76.3EBC

Any advice would be welcome

I would go with the book I did an impy a while ago mashed at 67 for I hour og was 1.094 FG 1.028 8.7%abv.pitched 3packs of us-05. The beer turned out rather good to be honest but I was looking for a bit more alcohol. I did make up for this a little though I added some oak chunks plus about 400ml of Bourbon to secondary.
