Hello,
Advice please. I pitched the Burton yeast on Friday from a starter great start fermenting well . Now 5 days later still great head on the surface the yeast itself like a pancake is laying on top of the brew with a white frothy head underneath. It tastes fine . Is this normal for Burton WLP 023 as this is my first brew with it ? . My beer is a standard bitter with an og of 1045
 
Can anyone predict what will happen to the yeast . will it sink or stay when fermenting is fiished or should I skim it

Yeah it will tend to stick around on top even once it's finished fermenting. It will eventually drop but you can either crash chill or rack from underneath it.
 
Got to love that Burton yeast for it's top fermenting properties.

Skim the yeast head off and stick it in a sterile jar for the next brew.
 
What do you think of dry hopping I have some citra hop pellets coming from Rob at the malt miller on wednesday how many pellets would you dry hop for 23 litres
 
I think it's a great idea, Citra isn't over the top and would go nicely in a bitter

Maybe 20g per 5 gallons. Throw them in and swirl it gently every day or two.
