Can anyone recomend a good book on the 'science' of all grain brewing?
I have read several on an introductory level, I'd quite like to look at something on a more in depth level..?

James houston home brewing beer is worth a look (99p in kindle format at present)

to expand somewhat on brewing for the love of hops/yeast a good read
 
Not specifically about all grain I've just read 'yeast' up to just before where it tells you about creating your own yeast lab. It's sciency without going too far, certainly educational, and cleared up a lot of areas where I'd heard conflicting opinions.

It's amazing how recently it was accepted that yeast was the thing that turned wort into beer.
