Traditionally this a lager but you can do an ale version. Just use a clean ale yeast like US-05 or Nottingham and ferment as cool as you can. CML kolsch would be another option for yeast

^^^ This too. I forgot about steam beer yeasts. Magrove Jacks and CML both do a CaliCommon yeast
