Could I have your views on how long a fermentation should last.
I mostly use safale04 and danstar east coast but am experimenting with others.
In the past I have only really left it for 7 days and if I got to 1011 on scale if target was 1008 I would rack it and keg it for a couple of weeks and then bottle it.
In your opinions should I be leaving it for 10 to 12 days to try and get closer to target FG?
I'm always worried about infection.
