They are Paklab kits for Amazon that I modified, one a European Carbernet Sauv. One a Chillian Merlot.
The Cab Sauv had added sugar and 350g elderberries to 13.5% ABV, with 10 days of powdered oak.
The Merlot had added sugar and 250g elderberries to 12.5% ABV with one week on oak chippings.
The Cab Sauv was bulk aged for 2 months before adding 20% of the month old Merlot, after a blending and tasting session
and has now been aging for a further month. The Cab Sauv would have stood more Merlot, but as the Merlot was that good on it's own and I had another Merlot kit i didn't want to sacrifice it all at this stage. It is very good and a clone for the Turner Road Merlot Reserve at £10 a bottle :thumb: :thumb:

The other merlot kit will be going on tonight and at a later stage with more blending and tasting I will further divide up and blend the two wines together up to a 50/50 mix.
So at the moment I have a superb fresh easy drinking fruity Merlot and a slightly new oaky Cabernet merlot with the fruit nose of the merlot but with much more depth, 6 more months bulk aging will bring it up right up there.
At the end of the year, I hope to end up with 3 or 4 very nice but distinctly different bordeaux style reds
