I'm alive!! 4 glasses all night!!
Lol I'm quite chuffed on the second DJ...
Still needs to mature and a hint of newness it if make sence?
The best nite sleep...had dreams I've not had them for months!
But I'm not making a habit of it!! Might have a glass on Xmas day.

today I'm going to decide on the first DJ.
it was either sulphur/acid taste and strong.
obviously I put finings etc, and it seems to cleared a bit.....but its all down to the taste wether I bin or not..

btw I added a half of spoon of sweetener in a bottle... its boost the other bottles. really lovely in fact.

At last the first red DJ has matured more.
So I racked it and ill bottle it about a day or so.
Final SG 990=11.16% ABV.
