Freezing Elderflowers?

A general question, is there any reason why you wouldn't freeze elderflowers?

My mum was asking about it for possibly keeping some for use out of season for making cordial and infusing jellies and I have spotted the potential for making a few gallons of wine out of season as well.
 
Thanks for that, i'd seen elsewhere online that using a normal freezer doesn't always preserve the flavour of flowers but I guess sealing them in a bag before freezing may help with that as the flavours are likely to become attached to any moisture in the bag and that can be extracted as ice.
