This is referenced in Radical Brewing. It's a 1776 book scanned and put online. It takes a bit of getting used to f being used instead of s ( the reading voice in my head sounded like it had a lisp). So it is fometimes instead of sometimes.
The chapter about The unwholesome practice of beating in the yeast is brilliant - apparently yeast frees the spiritous part of the wort by breaking the band of corruption but it tries to hang onto it and this results in the foam. By mixing the foam back into the wort the spirit is trapped. The ignorant and vulgar prefer this ale as they are fooled into thinking it is better.
So all you vulgar and ignorant - stop rousing yeast :nono:
