Missed O.G

I have done my first A G today, (thanks to muddy disco for the inspiration to build the set up) i really enjoyed all eight hours of it. Sorry no photos i will ammend this next time.

Now my question to the floor.

After the boil i ended up with 4.5 gallons @ 1.060 i was aiming for 5 gallon at around 1.050. Can i add fresh unboiled water to the brew to get the desired gravity?

recipe
4800g marris otter
560g crystal malt
60g goldings (start of boil)
12g goldings (15 mins from end of boil)
1tsp irish moss (15 mins from end of boil)
safale 04 or possibly nottingham (undecided)

That is what I did on my last one... :thumb:

Got way over on the efficiency aimed for (high 80s) and watered back to the recipe length.

Going to 5 gallons will take it to ~1.054, which is near enough to the recipe you wanted, and will give the hop profile of the original recipe.

Thanks for the kind words of support.

Now i have an issue the O.G was 1.050 and is now at 1.020 and has been for a couple of days. As you will be aware the ambient temp has been around 30 c and the first few days of fermentation were furious then nothing from the airlock. I racked it into a another vessel and after 24 hours still no activity and still 1.020. At this point i added another sachet of S04 thinking the yeast was burnt out but fermentables still present. Now another 24 hours on its still at 1.020. (neither sachets were re-hydrated).

Your suggestions please. :hmm:

I am of course guessing, but to end with a gravity that high it may be that your mash temperature was a little high, the higher your mash temperature the more dextrins left in the finished beer and the higher the final gravity.
Have you tasted it ? It may well be that although it seems like a high finishing gravity it will be a well balanced beer :thumb:
Don't worry too much it'll still be the best beer you've ever tasted ;)

You are correct the mash temp was a little high. I read that 66c was ideal but between 69 and 62 (Graham Wheeler) was acceptable. My initial temp was 70C a little high but i was unsure of the coolboxes efficiency however after 90 mins it was 68C. I'll try and nail 66C next time (shortly) I have no sparging equipment so i remashed twice with water of 78C each re-mash was 15 mins. then a 90 boil etc. So for now do i wait until the new yeast has dropped then bottle as usual?

Just be aware that you will need less priming sugar than usual, as the extra dextrins in the beer will still be very slowly fermenting ;)

When the yeast has dropped i'll bottle it, with slightly less priming sugar.
To answer an earlier question i missed, no i haven't tasted it yet, smells good though.

I was thinking of using the same grain bill for my next two brews, but doing one with fuggles and the other with the northdown, so i can try and understand the difference in bitterness and aroma. As for when, as soon as that sack of grain hits my doorstep i'll be on it. I'm hoping to do back to back brewdays this weekend. If not it'll be one sunday and one wednesday. It all depends on Barley Bottom. :pray: I ordered on wednesday so hopefully it'll arrive in the morning.
