Earl grey, like the bergamot.
Two gallons made, method for each dj.
10 earl grey tea bags... boiling water and steep for a few min's - bags then removed.
1 kg of sugar into dj, juice of 2 lemons and 1/2 an orange onto sugar.
Remains of peel and pith into tea and boiled for 5 min's, strained and poured onto sugar and dissolved sugar. (dj warmed first to help prevent shatter, still happened to break occassionally)
1/2 tsp of pectolase, 1 heaped tsp of wilkcos nutrient (as not much nutrient in the tea), 1 tsp of ysy compound.
Still managed to get a couple of pips in each dj and was careful. Fermenting away.
