I use Munton's DME. Works perfect.

For increasing your yeast cell numbers, DME is DME.

I didn't know you could use LME for starters. Makes sense I suppose, but all the guides only mention DME.

Do you still use 10% of the water volume?

I notice they do a light and medium DME, is the light the better one to use or again does it not matter.
I use light, or extra light. Simply as that was what I was advised to use.

I think the reason being that the darker the DME, the more chance it'll impart flavours into your starter.

Use whatever you have or can get the cheapest. To avoid it imparting flavors simply pour out the starter and only pitch the yeast.
