STOP..way to much specialist malt there...undrinkable
Nonsense, I have brewed exactly this several times, not sweet, one of the best beers I have tasted, check out the full recipe from Brewdogs DIYDOG and see all the hops listed to get a proper understanding of the whole recipe before you make brash statements about beers being undrinkable.

Well let's hope so.... fermenting away now! Will keep everyone posted as to how it turns out

I have made my 3rd batch of this now, dry hopped for 3 days, cold crashed for one day, rack off to a new bucket to leave the large amount of hops behind, added gelatin to it and cold crashed at 0 degrees for two days and then bottled, I will pour a glass of it and post here when I get back from offshore, this is one of my brews that I keep doing, great beer!!

Try telling that to the biggest "craft brewer" in the country, it's their recipe:

Ok, sure! Brew mutt has always given out their perfect recipe. Did you see that hop list!? Dang! An intern made that recipe!

Ok, I was put off making this last time but will now give it a go on Saturday. I was looking to follow the official recipe with no changes as it's currently my favorite tipple. So to clarify, those who have made this with good results, crystal 150 is ibu not lovibond? And dark or light Munich? Can I use carapills instead of caramalt?

Cheers

Ps Brett, lots of GH recipes there, would you recommend the imp stout? His dry stout turned out well and I've currently got his esb conditioning and cascade pale ale ready to bottle.

I use Light Munich, when it comes to the Crystal malts, my supplier has a malt called Crystal 150, it is 61-68 Lovibond, I use that and Crystal 400 as the Dark Crystal which is 158 – 181 °Lovibond.
I liked the RIS, I cheated and had a Coopers Stout kit lying around so I threw that in too, Made a 28 litre batch, it is great, but somehow mine is too fizzy, not problem though , just pour carefully and wait a bit...after 5 minutes it has chilled out, great dessert stout, my wife likes it with a nice piece of chocolate!

5AM saint is quite a sweet beer. The recipe has a lot of crystal in there but if it works it works.

Do you mean it tastes sweet, or by looking at the recipe you think it will be sweet? I don't think it tastes sweet, I have had mine, plus on tap at the pub and in a can.

I think it tastes sweet. I've drank it quite a bit. Has a boiled sweet aftertaste.

Sorry for the delay, I've been away at the BrewDog AGM as it happens!

The Crystal 150 refers to the EBC value, I had that confirmed by BrewDog themselves when I brewed this myself last year, I used Bairds Medium Crystal and for the Dark Crystal I used Bairds Dark Crystal.
Looking back at my notes, I also used CaraPils instead of CaraMalt, so that'll be fine.

Take no notice of those saying the recipe is wrong and there's too much speciality malt, this is a great beer and the recipe is fine.

Mines been in the primary since a week past Friday, plan to chill it this weekend for a couple of days, then move to a secondary, racking the cold beer on to the hops, will then let it warm back to 20degrees for 5 days, chill again to drop the hops and then bottle condition. Hopefully enough yeasty beasties to bottle condition!

Also, love this beer and the style is a really good, you get that hoppiness of the IPA but a bit more complexity. Can you post your recipe I've put the brewdog recipe in brewmate but it didn't match so I'd be interested to see what your doing particularly if you're on your 3rd batch of it.

BrewDog recipes are very "vague" to say the least. No mention of timings....start/middle/end.
I dont admire them for publishing their "recipes". It wont affect their profits
Please dont refer to them as "craft brewers", they are not. They are a billion pound company, who have just sold 23% of their shares to a private company.
They have hit the "Hipster" market and people are gulible (sp) enough to buy their beer.

Now here`s a thing......Punk IPA is in the top 3 of my all time favourte beers, but would I buy it....No.....Their Jackhammer is also in my top 3 (I will buy a bottle of this on a rare occasion)...The last one in my top 3 is Oakhams Citra, which I will willingly pay good money for.
And of cause JMHO

So you've got a vendetta against them for actually being good at business? Are you one of these people that stops following a band the moment they sign to a major label?

I dont have a vendetta against them. I admire the way that they have cornered the "Hipster" market. I admire their beers.
What I dont admire is their business stratagories (major spelling)
I dont admire the fact that they still call themselves "craft brewers" when they are clearly not.
They have over 250 beers on their books. Are you going to tell me that they have tried and tested and tweeked every single beer that they produced?

Your loss, sucks to be you.

They've published the recipes for almost every beer they've ever brewed, sure you have to experiment a bit with hop timings but you would have to do that with any recipe anyway to adapt to your own system.

Name any brewery that has come even close to doing as much for homebrewers, some people are never happy.
