I haven't done a kit for a few years, but I was always a big fan of the Brewferm ones. The combination of high ABV and it being a kit, I always left them for three months minimum, but they were always much better after six. It takes a bit of willpower, and a healthy stock of conditioned beer, but that's better than drinking the last few bottles just as it really hits it's stride.
