I've added apricots to my secondary, which has been merrily bubbling away for a week. I'm starting to wonder if there might be some sort of infection.. How long (roughly) do the sugars normally take to ferment out?

You have added additional fermentables so this might take a while, depending on quantity added. If you use a straining bag to suspend the fruit in the brew you could just remove it. A hydrometer reading should tell you where you are with the FG. If the wort smells and tatstes normal there shouldn't be an infection.
