I've gathered some elderberries and have been working around a recipe which called for 1.3kg berries plus the same of sugar.
I actually gathered around 1.8kg, but decided to try the same recipe stil for 1 DJ worth, just with extra berries for flavour/body/fun!
Iâve checked the OG and itâs off the scale of my hydrometer!
In hindsight I should have reduced the sugar to balance out the extra berries. My question is whether it would be more beneficial to split into two DJs worth by adding extra water, or would I then just create two thin tasting wines?
Of course one option would be to up the berries more with another forageâ¦
Any advice appreciated!
