Ages ago i got a Muntons Stark Naked Gammay and Solave(spelling?) at a knock down price.

Ive had them maturing for a while, red is ready to bottle as started a few weeks earlier, white i have just put stabiliser and finings in tonight.

So when i made the red i stuck to the instructions, its came out at 10.8%, ok.

The white wasnt the best og so i added some extra juice. Oops. Just checked and converted out to 25.4%! ****! I tasted it tonight, not too cloudy, pleasant smell, initial taste is good, then whammy, holding it in my mouth its like a spirit, slightly burning my gums! The mrs says it smells and tastes like sherry, but ive never had that so not sure.

Should i bin it or continue??

Always stick to the instructions, i know :(
 
I wouldn't bin it, try diluting it with wgj and bottled water in small amounts until you get the desired taste. The juice won't ferment anymore once stabiliser has been added.
