I have started a carrot wine to a Terry Garey recipe.
Initial fermentation of 2 gallons in a 5 gallon container Sg = 1.090
Recipe states cover and fit air lock.
( I thought primary fermentation should be with air. Ie bunged with cotton wool )
Followed recipe as stated with air lock. 2 weeks later strain into Demijohn on checking Sg find already 1.000.
Have I done something wrong ?
Should I not have used the air lock ?
Could I just bung it now and leave to clear ?At present I have left in Demijohn with Air Lock going to ferment to Sg .998

Lot of questions but would appreciate any advice.
 
Why do you think you have done something wrong, you have followed the recipe and its fermenting so things look good.

Was just surprised how far on it was before going into the Demijohn.
